When a new user joins the list later, they don’t receive the newsletters

When a user is added to an existing list later on, the newsletter is not sent to the newly added recipients when sending the newsletter to that list.The Joomla version is 5.4.1.

Is the newsletter scheduled to be sent? Or has it already finished sending to a list?
When a scheduled newsletter finishes sending, new subscribers appear in the Pending column, and you can manually send to them, if you want to.
There is currently no way to automatically send old, finished newsletters to new subscribers. Otherwise, they would receive dozens or even hundreds of emails after their subscription.

You can, however, create a Welcome email after subscription newsletter and Campaign newsletters. To do so, you can leverage the corresponding options of the "Sending Details" tab.

Why is it not possible to sort by the Pending, Sent, Opened columns?

Sorting by those columns is not possible because Joomla performs sorting on the database level and these columns are calculated on runtime rather than saved and loaded from the database.

Is there anything we could change to make it work better for you?
