I apologize. I'm not sure I understand the question. I also do not know which extension you are using.
I presume that you are using Rapid Contact, and want to create a form that does not require the user to write their email.
If that is the case, unfortunately, you cannot do that with Rapid Contact free. Writing the user's email is mandatory.
However, if you want to create such a custom form, you may want to take a look at Rapid Contact Ex.
Rapid Contact Ex allows you to create any form you want, even have multiple forms per site, and you can use it on unlimited sites! You can then create a form that has an email field and/or a telephone field and/or an address field, and you may set any or none of those as required.
