Hello Victor and thank you for posting. (Vielen Dank und Willkommen!!)

As with any extension, in order to load the proper language file, there are some requirements to be met.
1. Is the proper language installed?
2. Is there an active Content Language for the language you are trying to use?
3. Have you placed the language file in the proper directory? (language/de-DE/de-DE.com_simplequiz.ini)

What I am trying to say is this: Sometimes users create content in their respective languages without actually enabling the language functionalities of Joomla. If Joomla doesn't know that the active language is German (de-DE) it will use the English files (en-GB) for the extensions.
If the translation you have made is not customized to your needs, you may as well share it here with us, and we can possibly include it in the extension package.

Thanks again!
